The episode was produced in 1990 but the recipes are still fresh. Chef Richard prepares 3 dishes from one chicken. Chicken soup, a low cholesterol baked chicken breast dish, and a boneless chicken legs recipe.

In this episode Rick Baskowski, the head chef at the Grafton Inn, shows some vegetable preparation methods, french knife exercises, and using these skills to enhance menus.
